Mango & Drumstick curry / Manga and Muringka Curry



Ingredients

Mango (manga)  - ½ cup diced
Drumstick – 2 nos
Shallots  - 1/2 cup chopped
Chilly powder - 1 Tsp
Turmeric powder - 1/4 Tsp
Grated coconut 1 cup
Fenugreek seeds 1/2 Tsp
Mustard seeds 1/2 Tsp
Cumin seeds 1/2 Tsp
Curry leaves
Green chilli  - 1 small
Water – as required
Salt – to taste
Coconut oil - 1 tablespoon

Method

Cut drumsticks lengthwise into small pieces. In a chatti /mud pot boil water and add red chilli powder, turmeric powder, drumsticks and salt. Allow it to cook for 5 mins. Now add the diced mango and let it cook on a slow fire with lid on for 4  to 5 mins till its cooked.(ensure not to over cook).

Grind the grated coconut, cumin seeds and 1 small green chilli into fine paste by adding little water. Add the paste to the cooked mango and drumstick. Add water if required. Allow it to boil well, till it reached the required consistency.

Heat oil in a kadai and add mustard seeds, cumin seeds, fenugreek seeds and curry leaves. Allow it to splutter and add shallots. When it turns light brown, pour in to the mango and drumstick gravy and cook it for 2 mins.

This curry can be served with rice, especially the kerala red rice.
